Your New Favorite Salad

You don’t know it yet, but you are about to meet your new favorite salad.

The main ingredients in this salad are artichokes and avocados. Now, I know some people don’t like artichokes and/or avocados. If you’re one of them, I have one question to ask you: What’s wrong with you? :) Even if they’re not your favorite ingredients, you should really give this one a try. Let me tell you why.

This salad is always followed by rave reviews. Let me warn you ahead of time though… This is an infectious recipe. It will spread quickly to others. Wanna know the best part? It’s EASY and a very healthy addition to your recipe collection! (Oh yeah, one more thing: my kids like it too!)

What you need:

  • Spring Salad Mix
  • 5-7 chopped artichoke hearts (marinated in oil)
  • 1 avocado, chopped
  • feta cheese

Optional additions:

  • sliced olives
  • grilled chicken (makes a great meal & sooo delicious!)
  • shredded parmesan cheese (my preference: feta cheese only)

You really have the flexibility to put as many (or as little) artichokes as you want. I fill my salad bowl about 3/4 full, then add the chopped ingredients. If you’re only making enough for one or two, just decrease the amount to your taste.

Instructions:
