Oatmeal Butterscotch Cookies

You know what’s coming next, don’t you? Yes, a much delayed recipe. Surprisingly, I’ve got a lot of photos, just not enough time for blogging lately… which makes me happy to share this with you.

Bill’s favorite cookie recipe. Let’s just say all of my boys love it. Abby too, but she favors chocolate chip a little more. Don’t let that throw you off though. There’s no doubt about it… This is one good cookie.

Adapted from Nestle Toll House

In a small bowl, mix…

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon

In mixer, beat…

  • 1 cup (2 sticks) salted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar

Let the mixer run for a few minutes. Then, add…

  • 2 extra large eggs
  • 1.5 teaspoon vanilla extract

Mix for 30 more seconds, then add some LOVE. :)

Gradually beat in the flour mixture. Don’t overmix.

With a spatula, mix in…

  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

Using a medium scoop, place cookie dough on a Silpat.

If you don’t have a Silpat, this is a must-have in the kitchen. (I’m serious… get one now.)

Bake for 7-10 minutes. We like ours a little crispy on the edges, so I bake the cookies a little longer.

For a flatter cookie (which I also like):
A minute before the cookie is finished, grab the baking sheet – with an oven mitt – and gently tap it on the counter or in the oven to flatten the cookies.
